Call for submissions -- "the pH show"!

I just had the chance to taste numerous rieslings in southern Germany. From my travels and plentiful wine tastings I realize that the riesling grape in this region is the king of acidity mostly because of the cooler climate and the characteristics of this grape. Winemakers fortunately have the choice of letting the grapes ripen longer to the level where sugar integrates with the acid to make a beautifully balanced wine. Acid is something one can detect in wine not by taste per say, but by mouth-feel. A super dry trocken riesling can offer clarity and leave the mouth tingling. A decadent trockenbeerenaulese is concentrated and is instantly satisfying. Harvesting the grapes requires fine tuning to pick exactly what tone each vintage can offer. One tiny vineyard can offer a staggeringly vast range of riesling wines.

We are looking for short films under 10 min. that in one form or another interprets acidity under the heading "pH". This is a loose theme, and we are looking forward to seeing what you've got.
